When No One Knows What to Eat - We Make This

Some nights, the hardest part of dinner isn’t the cooking—it’s figuring out what everyone will actually eat.

That’s exactly why I love these cilantro lime rice steak bowls.

They’re flavorful, filling, easy to customize, and simple enough for a busy weeknight. You get juicy seasoned steak, bright cilantro lime rice, and a dinner that feels a little more exciting than the usual weeknight routine without turning dinner into another job.

Why You’ll Love These Steak Bowls

These bowls check a lot of boxes for busy families:

  • Family-friendly: Everyone can build their bowl the way they like it.

  • Filling: Steak and rice make this a meal that actually keeps everyone satisfied.

  • Weeknight-friendly: The ingredients are simple and the cooking process is straightforward.

  • Easy to customize: Add your favorite toppings, sauces, vegetables, or leave things off for picky eaters.

  • Great for leftovers: Extra steak and rice make an easy lunch the next day.

This is one of those meals I reach for when everyone is hungry, but nobody really knows what they want.

How to Make Cilantro Lime Rice Steak Bowls

Step 1: Start With the Rice

Add your rice and water to your pot using a 2-to-1 ratio of water to rice.

Add butter and cilantro paste right from the beginning so the rice starts building flavor while it cooks.

Add a splash of lime juice, then season everything to taste.

Bring the rice to a boil, reduce the heat, cover, and let it cook for about 25 minutes, or until the rice is tender and the liquid has been absorbed.

Once it’s finished, fluff it with a fork.

Step 2: Season the Steak

While the rice cooks, move on to the steak.

Add your seasonings, followed by a splash of Worcestershire sauce and Dale’s marinade.

Then add a little lime juice and cilantro paste.

Toss everything together so the steak is evenly coated.

The Worcestershire and marinade add that deep savory flavor, while the lime and cilantro keep everything bright enough to pair with the rice.

Step 3: Cook the Steak

Heat your pan and add the steak.

Cook until the outside develops a nice sear and the steak reaches your preferred level of doneness.

Try not to overcrowd the pan. Giving the steak a little room helps it brown instead of steam.

Step 4: Build the Bowls

Now for the best part.

Start with a generous scoop of cilantro lime rice.

Pile the steak over the top.

Then let everyone add whatever toppings they like.

That’s what makes bowls such an easy family dinner—one base meal can work for several different preferences without making two completely separate dinners.

Make It Work for Picky Eaters

If you have a picky eater at home, keep their bowl simple.

You can serve:

  • Plain rice

  • Steak on the side

  • Cheese

  • A familiar sauce or topping

Then let everyone else load theirs up.

This is one of my favorite ways to make dinner customizable without creating extra work.

Make-Ahead Tips

You can prep several parts of this meal ahead of time.

Season the steak:
Marinate or season the steak earlier in the day and keep it refrigerated until you’re ready to cook.

Prep toppings:
Chop vegetables ahead of time.

Cook extra rice:
Cilantro lime rice reheats well and can be used for lunches or another dinner later in the week.

Leftover Ideas

If you have leftovers, don’t feel like you have to rebuild the exact same bowl.

Use the steak and rice for:

  • Burritos

  • Quesadillas

  • Taco salads

  • Nachos

  • Lunch bowls

  • Steak-and-rice wraps

A dinner that can turn into tomorrow’s lunch is always a win.

Helpful Kitchen Tools

A few tools can make this recipe even easier:

  • A good skillet for getting a nice sear on the steak

  • Tongs for turning and serving the steak

  • A rice cooker or medium saucepan

  • A citrus juicer for the lime

  • Meal-prep containers for leftovers
