Meatball Subs So Good They Ruined Takeout
Some nights, takeout feels easier.
You’re tired, everyone’s hungry, and cooking feels like one more thing standing between you and finally sitting down for the night. But these meatball subs? They’re one of those dinners that make staying in feel completely worth it.
Toasted bread, rich homemade sauce, juicy meatballs, melty mozzarella, and parmesan all come together into the kind of comfort food that feels like a real dinner win.
And the best part? This recipe is flexible enough to fit real life. You can make the meatballs ahead of time and freeze them for later, or keep things extra simple with frozen meatballs and store-bought sauce on busy nights.
Either way, you’re ending up with a dinner everybody looks forward to.

How to Make Meatball Subs
1. Build the Meatballs
Start by seasoning the ground beef with garlic salt, seasoning salt, smoked paprika, Tony’s Creole seasoning, Worcestershire sauce, and Dale’s marinade. Mix everything together until every bite is packed with flavor.
Add breadcrumbs and an egg, then roll the mixture into meatballs.
Bake until cooked through and nicely browned.
2. Make the Sauce
Build the sauce with diced tomatoes and a handful of carrots to cut some of the acidity and balance everything out.
Season it up and let everything soften before blending it into a rich, velvety sauce with an immersion blender.
3. Assemble the Subs
Now for the good part.
Layer the meatballs onto toasted bread, stuff in mozzarella cheese, and finish everything off with parmesan. The melty cheese and rich sauce make these completely worth staying in for.
Make-Ahead Tip
One of my favorite things about this recipe is how easy it is to prep ahead.
You can freeze the meatballs on a baking sheet and save them for busy nights later on. Or, if you need dinner handled fast, frozen meatballs and store-bought sauce work great too.
No matter how you make them, these subs are always a hit.
